Instructions

  1. In a mixing bowl, whisk together the flour, milk, pumpkin puree, eggs, sugar, cinnamon, nutmeg, and salt until smooth.
  2. Stir in the melted butter and let the batter rest for 30 minutes.
  3. Heat a non-stick skillet over medium heat and lightly grease it.
  4. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
  5. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter, stacking the crepes on a plate.
  7. In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  8. Spread a layer of the mascarpone mixture on each crepe, roll them up, and serve warm.
