Pumpkin Bars with Cream Cheese Frosting

Delicious pumpkin bars topped with creamy frosting, perfect for fall.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, and vegetable oil until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Pour the batter into a greased baking pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. While the bars are cooling, prepare the frosting by beating cream cheese and butter until smooth.
  9. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  10. Spread the cream cheese frosting over the cooled pumpkin bars.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • These bars can be frozen for up to 3 months.
  • For a spicier flavor, add a pinch of ground ginger.
