- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, sugar, and vegetable oil until well combined.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Pour the batter into a greased baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are cooling, prepare the frosting by beating cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until creamy.
- Spread the cream cheese frosting over the cooled pumpkin bars.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- These bars can be frozen for up to 3 months.
- For a spicier flavor, add a pinch of ground ginger.
