Description

Discover the secret to a delicious and nutritious snack with these protein-packed cottage cheese egg bites.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese and eggs, and whisk until smooth.
  3. Add the shredded cheese and diced vegetables to the mixture, and season with salt and pepper.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin.
  8. Serve warm or store in the refrigerator for a quick snack later.
