- 4 large potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup breadcrumbs
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the potatoes in salted water until tender, then drain and cool.
- Peel and cube the potatoes.
- In a bowl, combine the sour cream, cheddar cheese, green onions, salt, and pepper.
- Gently fold in the cubed potatoes until well coated.
- Transfer the mixture into a greased baking dish.
- In a small bowl, mix breadcrumbs with melted butter, then sprinkle on top of the potato mixture.
- Bake for 30-35 minutes, until the top is golden and the dish is heated through.
- Serve warm.
