Description

A refreshing and delicious potato salad perfect for spring dinners and potlucks.


Ingredients

Scale
  • 2 pounds Idaho potatoes
  • 1 cup coleslaw dressing
  • 1/2 cup chopped celery
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Wash and peel the Idaho potatoes, then cut them into bite-sized pieces.
  2. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool completely.
  4. In a large bowl, combine the cooled potatoes, coleslaw dressing, celery, green onions, and parsley.
  5. Season with salt and pepper to taste, and mix gently until well combined.
  6. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
