Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or small cake molds.
  2. Mix the shredded coconut, sugar, and a pinch of salt together in a bowl.
  3. Whisk together the eggs, coconut milk, and vanilla extract in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  5. Gently fold in the flour and baking powder until just mixed.
  6. Pour the batter into the prepared molds, filling them about 3/4 full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before removing from molds and serve.
