Ingredients

- 2 cups shredded coconut
- 1 cup sugar
- 3 eggs
- 1 cup coconut milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or small cake molds.
- Mix the shredded coconut, sugar, and a pinch of salt together in a bowl.
- Whisk together the eggs, coconut milk, and vanilla extract in another bowl.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
- Gently fold in the flour and baking powder until just mixed.
- Pour the batter into the prepared molds, filling them about 3/4 full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before removing from molds and serve.
Notes
Use fresh grated coconut for authentic flavor. Store in an airtight container for up to 5 days.
