Description

A refreshing and nutritious salad packed with greens and plant-based ingredients.


Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup sunflower seeds
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Sprinkle the sunflower seeds and feta cheese over the top.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
