Delicious and unique pistachio sandwich cookies filled with creamy white chocolate, perfect for afternoon tea.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup ground pistachios
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, ground pistachios, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- Meanwhile, melt the white chocolate chips in a microwave-safe bowl.
- Once the cookies are cool, spread a layer of melted white chocolate on the bottom of one cookie and sandwich it with another cookie.
- Allow the chocolate to set before serving.

- For a more intense pistachio flavor, add more ground pistachios to the dough.
