Ingredients

  • 1 store-bought pie crust or homemade pie crust
  • 2 cups fresh pineapple, chopped
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using a homemade pie crust, roll it out and fit it into a pie dish.
  3. In a saucepan over medium heat, combine chopped pineapple, sugar, cornstarch, salt, and lemon juice. Stir until the mixture thickens and becomes bubbly.
  4. Pour the pineapple filling into the prepared pie crust and dot with butter.
  5. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  6. Allow to cool before serving. Enjoy with a cup of coffee!

Notes
