- 1 store-bought pie crust or homemade pie crust
- 2 cups fresh pineapple, chopped
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter
Instructions
- Preheat your oven to 350°F (175°C).
- If using a homemade pie crust, roll it out and fit it into a pie dish.
- In a saucepan over medium heat, combine chopped pineapple, sugar, cornstarch, salt, and lemon juice. Stir until the mixture thickens and becomes bubbly.
- Pour the pineapple filling into the prepared pie crust and dot with butter.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Allow to cool before serving. Enjoy with a cup of coffee!
Notes
