- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- ⅓ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp cornstarch + 1 tbsp water
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- ¼ cup green onions, chopped
- Optional: sesame seeds, chili flakes
Instructions
- Sauté chicken in oil until browned and cooked through. Remove from pan.
- Sauté garlic in the same pan.
- Add soy sauce, pineapple juice, honey, and vinegar. Simmer briefly.
- Stir in cornstarch slurry. Cook until glossy.
- Add chicken, pineapple, and bell pepper. Stir to coat everything well.
- Mix in cooked rice. Heat through until everything is warmed.
- Top with green onions and sesame seeds. Serve immediately.
Notes
For a spicier version, add chili flakes during cooking. Marinating chicken in soy sauce for 30 minutes can enhance flavor.
