Ingredients

  • 1 lb chicken breast, cubed
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped
  • Optional: sesame seeds, chili flakes


Instructions

  1. Sauté chicken in oil until browned and cooked through. Remove from pan.
  2. Sauté garlic in the same pan.
  3. Add soy sauce, pineapple juice, honey, and vinegar. Simmer briefly.
  4. Stir in cornstarch slurry. Cook until glossy.
  5. Add chicken, pineapple, and bell pepper. Stir to coat everything well.
  6. Mix in cooked rice. Heat through until everything is warmed.
  7. Top with green onions and sesame seeds. Serve immediately.

Notes

For a spicier version, add chili flakes during cooking. Marinating chicken in soy sauce for 30 minutes can enhance flavor.
