Instructions
- Roast the beef bones in the oven at 200°C for 30 minutes.
- In a large pot, add the roasted bones, brisket, onion, ginger, and spices.
- Cover with water and bring to a boil, then reduce to a simmer for at least 4 hours.
- Strain the broth and return it to the pot, discarding the solids.
- Cook the rice noodles according to package instructions.
- Serve the noodles in bowls, topped with sliced brisket and hot broth.
- Garnish with fresh herbs, lime wedges, and sliced chili.

- For a clearer broth, skim off any foam that rises to the surface while simmering.
