Description

Ingredients

  • 1 kg beef bones
  • 500 g beef brisket
  • 200 g rice noodles
  • 1 onion, halved
  • 1 ginger root, halved
  • 5 star anise
  • 1 cinnamon stick

  • 1 tsp coriander seeds
  • Salt to taste
  • Fresh herbs (basil, cilantro)
  • Lime wedges
  • Sliced chili

Instructions

  1. Roast the beef bones in the oven at 200°C for 30 minutes.
  2. In a large pot, add the roasted bones, brisket, onion, ginger, and spices.
  3. Cover with water and bring to a boil, then reduce to a simmer for at least 4 hours.
  4. Strain the broth and return it to the pot, discarding the solids.
  5. Cook the rice noodles according to package instructions.
  6. Serve the noodles in bowls, topped with sliced brisket and hot broth.
  7. Garnish with fresh herbs, lime wedges, and sliced chili.

Notes

  • For a clearer broth, skim off any foam that rises to the surface while simmering.
  • Adjust the seasoning with fish sauce for added depth of flavor.
