Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 4 slices provolone cheese
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the sliced onions and bell peppers, cooking until softened.
  3. Add the mushrooms and cook until they are tender.
  4. Push the vegetables to the side and add the ribeye steak to the skillet.
  5. Season with salt and pepper, cooking until the steak is browned.
  6. Mix the vegetables and steak together in the skillet.
  7. Top with provolone cheese and cover until melted.
  8. Serve over cooked rice or quinoa.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • Feel free to substitute the ribeye with another cut of beef.
