Description

A vibrant and aromatic Persian dish featuring basmati rice, nuts, and dried fruits, perfect for special occasions.


Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 cup slivered almonds
  • 1/2 cup pistachios, chopped
  • 1/2 cup raisins
  • 1/2 cup dried apricots, chopped
  • 1/2 teaspoon saffron threads
  • 1/4 cup orange juice
  • 1/4 cup butter
  • 1 teaspoon cinnamon
  • Salt to taste


Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, bring 4 cups of water to a boil and add the rinsed rice and salt.
  3. Cook the rice for about 10-12 minutes until tender, then drain and set aside.
  4. In a small bowl, steep the saffron threads in orange juice for about 10 minutes.
  5. In a large skillet, melt the butter over medium heat and add the almonds, pistachios, raisins, and dried apricots.
  6. Stir in the cinnamon and cook for 2-3 minutes until the nuts are lightly toasted.
  7. Add the cooked rice to the skillet and gently mix in the saffron and orange juice.
  8. Cover and let it steam on low heat for another 10 minutes to allow the flavors to meld.
  9. Serve warm, garnished with additional nuts and dried fruits if desired.

Notes

  • For a vegetarian version, substitute butter with olive oil.
  • Feel free to add other dried fruits like cranberries or figs.
  • This dish can be made ahead of time and reheated before serving.
