- 1 pound boneless, skinless chicken thighs or breasts
- 1 cup sliced pepperoncini
- 1 cup heavy cream
- 3 cloves fresh minced garlic
- 1 cup low-sodium chicken broth
- To taste salt
- To taste pepper
Instructions
- Heat a large skillet over medium heat and add a splash of olive oil.
- Season the chicken with salt and pepper.
- Sear the chicken in the skillet for about 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the pepperoncini, followed by the chicken broth, scraping up any bits from the bottom of the pan.
- Bring to a simmer and then reduce heat to low.
- Slowly pour in the heavy cream, stirring until combined and thickened.
- Return the chicken to the skillet, spooning the sauce over it.
- Simmer for an additional 3-5 minutes to meld the flavors.
- Adjust seasoning if necessary, and serve warm over rice or pasta.
