Description

Delightful muffins blending rich pecan flavor with sweet brown sugar, perfect for breakfast or snacks.


Ingredients

  • 2 cups All-purpose flour (Can substitute with a gluten-free blend)
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 cup Unsalted butter (melted)
  • 1 cup Light brown sugar
  • 2 large Eggs
  • 1/2 cup Sour cream
  • 1/2 cup Whole milk
  • 2 teaspoons Vanilla extract
  • 1 cup Finely chopped pecans (Toast before adding)
  • 1/2 cup Whole pecan halves
  • 1/4 cup Brown sugar
  • 2 tablespoons Melted butter


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, combine melted butter and brown sugar. Stir until well mixed. Add eggs, sour cream, milk, and vanilla extract, blending until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Carefully fold in the finely chopped pecans.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full. Sprinkle the tops with whole pecan halves and a bit of brown sugar, followed by a drizzle of melted butter.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes, then remove from the tin and enjoy!

Notes

Toast your pecans for enhanced flavor. Store in an airtight container and reheat as needed.
