- 2 cups All-purpose flour (Can substitute with a gluten-free blend)
- 1 teaspoon Baking soda
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/2 cup Unsalted butter (melted)
- 1 cup Light brown sugar
- 2 large Eggs
- 1/2 cup Sour cream
- 1/2 cup Whole milk
- 2 teaspoons Vanilla extract
- 1 cup Finely chopped pecans (Toast before adding)
- 1/2 cup Whole pecan halves
- 1/4 cup Brown sugar
- 2 tablespoons Melted butter
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, combine melted butter and brown sugar. Stir until well mixed. Add eggs, sour cream, milk, and vanilla extract, blending until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
- Carefully fold in the finely chopped pecans.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full. Sprinkle the tops with whole pecan halves and a bit of brown sugar, followed by a drizzle of melted butter.
- Bake for 18-20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool for a few minutes, then remove from the tin and enjoy!
Notes
Toast your pecans for enhanced flavor. Store in an airtight container and reheat as needed.
