Description

Bright and refreshing popsicles with layers of strawberry, coconut, and blueberry, perfect for summer celebrations.


Ingredients

Scale
  • 1 cup strawberries, pureed
  • 1 cup coconut milk or yogurt
  • 1 cup blueberries, pureed
  • Sweetener to taste (optional)


Instructions

  1. Blend the strawberries until smooth.
  2. Pour the strawberry puree into popsicle molds, filling them about one-third full.
  3. Freeze for about 60 minutes until slightly firm.
  4. Mix the coconut milk or yogurt with optional sweetener, then pour over the strawberry layer in the molds, filling them another third full.
  5. Freeze for another 60 minutes until firm.
  6. Puree the blueberries and pour them into the molds to fill completely.
  7. Insert sticks and freeze until solid, about 240 minutes or overnight.
  8. Run warm water over the outside of the molds to remove the popsicles.

Notes

Ensure each layer is firm before adding the next for clean lines.
