Description

A fresh and vibrant parsley pesto that adds flavor to any dish.


Ingredients

Scale
  • 2 cups fresh parsley leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the parsley, Parmesan cheese, pine nuts, and garlic.
  2. Pulse until the ingredients are finely chopped.
  3. With the processor running, slowly add the olive oil until the mixture is smooth.
  4. Season with salt and pepper to taste.
  5. Transfer the pesto to a jar and store in the refrigerator.

Notes

  • For a nut-free version, you can omit the pine nuts.
  • This pesto can be used on pasta, sandwiches, or as a dip.
  • It can be stored in the refrigerator for up to a week.
