Oven Baked Shrimp Skewers

Description

A delightful dish of shrimp marinated in garlic, lime, and cilantro, baked to perfection on skewers.


Ingredients

Scale
  • 4 cups loosely packed cilantro stems & leaves, rinsed & pat dry
  • 6 cloves garlic
  • 1/4 cup olive oil
  • 2 limes, juiced & zested
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 2 tablespoons salted butter, melted
  • 1 1/2 pounds raw 21/25 large shrimp, peeled & deveined, pat dry


Instructions

  1. Add the cilantro, garlic, olive oil, lime juice, lime zest, honey, cumin, and salt into a large food processor. Blend until smooth.
  2. Remove about 2 tablespoons of the cilantro marinade and whisk it into a small bowl of melted butter. Set aside.
  3. Combine the marinade and shrimp in a large bowl. Toss until well combined. Cover and marinate in the fridge for 30-60 minutes.
  4. Preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with parchment paper.
  5. Pierce the shrimp using the sharp end of the skewer. Repeat threading 5-6 shrimp per skewer. You should have about 6 kabobs.
  6. Bake for 7-8 minutes and broil if desired.
  7. Brush hot shrimp with the butter sauce.

Notes

Refrigerate leftovers in an airtight container for up to 2 days. For best results, enjoy fresh.
