Description

A delicious and healthy way to enjoy eggplant, baked to perfection with Italian flavors.


Ingredients

Scale
  • 2 medium eggplants
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and season with salt, pepper, and Italian seasoning.
  4. Arrange the eggplant slices on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20 minutes, flipping halfway through.
  6. Remove from the oven and spread marinara sauce over each slice.
  7. Top with mozzarella and Parmesan cheese.
  8. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Serve with a side salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
