Orzo Salad

Description

A delightful and refreshing orzo salad packed with flavors and perfect for any occasion.


Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, bring 2 cups of water to a boil.
  2. Add the orzo pasta and cook according to package instructions until al dente.
  3. Drain the orzo and rinse under cold water to cool.
  4. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or olives for extra flavor.
  • This salad can be made a day in advance for convenience.
