- 370g Basic Cookie Dough Recipe
- 85g crystallized ginger (finely diced)
- Zest of 1 orange
- 3 tablespoons white coarse sanding sugar
Instructions
- Prepare the Basic Cookie Dough as directed.
- Fold in the finely diced crystallized ginger, ensuring it’s well distributed throughout the dough.
- Add the fresh orange zest, mixing thoroughly to infuse the citrus flavor evenly.
- Form the dough into a log shape, about 2 inches in diameter.
- Wrap the dough log in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Slice the chilled dough log into even rounds, about 1/4 inch thick.
- Place the cookie slices on the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle the tops of the cookies with white coarse sanding sugar.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
