A delicious and easy recipe for lasagna made in one pot, perfect for a quick weeknight dinner.

- 12 oz lasagna noodles
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 24 oz marinara sauce
- 4 cups water
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until softened.
- Stir in marinara sauce, water, and Italian seasoning.
- Break lasagna noodles into pieces and add to the pot.
- Bring to a boil, then reduce heat and simmer for about 15 minutes, stirring occasionally.
- Once noodles are tender, stir in ricotta cheese and half of the mozzarella cheese.
- Top with remaining mozzarella and Parmesan cheese, cover, and let it melt.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add vegetables like spinach or mushrooms for extra nutrition.
- This dish can be made ahead and reheated for leftovers.
- For a vegetarian version, substitute ground beef with lentils or mushrooms.
