Description

A hearty and flavorful one-pot dish featuring tender chicken and traditional Irish ingredients.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup potatoes, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove the chicken and set aside.
  4. Add onion, carrots, and garlic to the pot and sauté until softened.
  5. Stir in the chicken broth, potatoes, thyme, salt, and pepper.
  6. Return the chicken to the pot, cover, and simmer for 30 minutes.
  7. Serve hot and enjoy!
