Description

Ingredients

  • 1 (3-4 pound) corned beef brisket
  • 1 medium onion, quartered
  • 4 cups of water
  • 1 teaspoon black peppercorns
  • 2 cloves garlic, minced
  • 1 head of cabbage, cut into wedges
  • 4 carrots, sliced
  • 4-5 potatoes, quartered
  • Salt to taste


Instructions

  1. Place the corned beef brisket in a large pot and add the onion, garlic, black peppercorns, and water.
  2. Bring to a boil, then reduce heat to low and simmer for 120-180 minutes, or until the beef is tender.
  3. Add the sliced carrots, potatoes, and cabbage to the pot.
  4. Cook for an additional 30-40 minutes, until the vegetables are tender.
  5. Remove the corned beef, let it rest for a few minutes, then slice against the grain. Serve with the vegetables.

Notes

Rinse the corned beef before cooking to remove excess salt. Always let corned beef rest before slicing for maximum juiciness.
