Description

A delicious and easy one-pan meal featuring pesto chicken, tortellini, and fresh spring vegetables.


Ingredients

  • 1 pound chicken breast, diced
  • 2 cups tortellini
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Stir in asparagus and cherry tomatoes, cooking until tender.
  4. Add tortellini and pesto sauce, stirring to combine.
  5. Cook for an additional 3-5 minutes until heated through.
  6. Season with salt and pepper to taste.
