- 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
- 1 lb asparagus, trimmed
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes, asparagus, minced garlic, olive oil, oregano, salt, and pepper.
- Spread the mixture in a single layer on a large baking sheet.
- Roast for 20-25 minutes, or until potatoes are tender and asparagus is crisp-tender, flipping halfway through.
- Remove from oven and drizzle with lemon juice.
- Garnish with fresh parsley and serve immediately.
Notes
