Description

A vibrant and comforting dish featuring roasted Yukon gold potatoes and fresh asparagus, seasoned with garlic and herbs, all cooked in one pan for easy cleanup.


Ingredients

  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1 lb asparagus, trimmed
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes, asparagus, minced garlic, olive oil, oregano, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Roast for 20-25 minutes, or until potatoes are tender and asparagus is crisp-tender, flipping halfway through.
  5. Remove from oven and drizzle with lemon juice.
  6. Garnish with fresh parsley and serve immediately.

Notes

Don’t overcrowd the pan for even roasting, and use fresh ingredients for the best flavor.
