Description

Delightful combination of chewy oats and rich chocolate in a comforting cookie.


Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup quick oats
  • 1 cup semi-sweet mini chocolate chips
  • 1/2 cup chopped pecans (optional)


Instructions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Cream together softened butter, granulated sugar, and brown sugar using a fork until smooth.
  4. Add egg and vanilla; mix until well combined.
  5. Stir in flour, baking soda, and salt until just combined.
  6. Fold in oats, chocolate chips, and pecans gently.
  7. Scoop dough onto the prepared baking sheet, spacing them about 3 inches apart.
  8. Bake for 8–9 minutes until edges are golden brown but centers remain soft.
  9. Optional: Garnish with additional pecans immediately after removing from the oven.
  10. Allow to cool on the baking sheet for 10–15 minutes before transferring to a cooling rack.

Notes

Chill the dough for thicker cookies. Use room temperature butter for best results.
