Description

Delightful muffins filled with rich Nutella and coated with a sweet cinnamon sugar, perfect for any occasion.


Ingredients

  • 1 1/3 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/3 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg, slightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1/3 cup Nutella
  • 3 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)


Instructions

  1. Preheat oven to 350F/180C and grease a mini muffin pan.
  2. Sift together flour, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  3. Beat together butter and sugar in a standing mixer on medium speed for 3 minutes.
  4. Mix in egg, vanilla extract, and milk until combined.
  5. Reduce mixer speed to low and add half of the flour mixture until just combined, then add the rest.
  6. Spoon about 1 tablespoon of batter into each muffin cavity, layer with 1/2 teaspoon Nutella, and cover with more batter until about ¾ full.
  7. Bake for about 10 minutes. Allow to cool for 5 minutes, then remove from pan and cool completely on a wire rack.
  8. Mix sugar and cinnamon together for topping in a small bowl.
  9. Dip the top of each muffin in melted butter and then in the cinnamon-sugar mixture.
  10. Store in an airtight container for up to 3 days, or freeze for up to 2 months.

Notes

Ensure butter and eggs are at room temperature for better mixing. Avoid overmixing to keep muffins fluffy.
