Instructions
- In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add the ground ginger, cinnamon, nutmeg, and cloves, and mix until well combined.
- Layer the crushed gingerbread cookies at the bottom of serving cups.
- Spoon the cheesecake mixture over the cookie layer.
- Repeat the layers until the cups are filled.
- Chill in the refrigerator for at least 4 hours or overnight.
- Garnish with extra crushed gingerbread cookies before serving.

- For a stronger spice flavor, adjust the amount of ginger and cinnamon to taste.
