Description

Deliciously soft and chewy cookies infused with mint and loaded with Oreo pieces.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 3 cups all-purpose flour
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed Mint Oreo cookies
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs, vanilla extract, and mint extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, pudding mix, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed Mint Oreo cookies and chocolate chips if using.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger mint flavor, increase the mint extract to 1.5 teaspoons.
  • Store cookies in an airtight container for up to a week.
