- ½ cup vanilla protein powder (or unflavored)
- ⅓ cup almond butter
- ¼ cup maple syrup or honey
- ½ tsp peppermint extract
- ¼ cup mini chocolate chips

- 1–2 Tbsp almond milk (if needed)
Instructions
- In a large bowl, stir together oats, protein powder, and salt.
- Add almond butter, maple syrup, and peppermint extract. Stir until thick dough forms.
- Gently mix in mini chocolate chips. If dough feels dry, add almond milk one tablespoon at a time.
- Use your cookie scoop or clean hands to form 1-inch balls.
- Place in an airtight container and refrigerate for 20 minutes to firm up.
Notes
For nut-free versions, swap almond butter with sunflower seed butter. Store in the fridge up to 7 days or freeze for 3 months. Great for kids, workout snacks, or sweet cravings.
