  • Author: zoe
  • Total Time: 10 minutes
  • Yield: 12-14 balls 1x

Description

These no-bake Mint Chocolate Chip Protein Balls are a nostalgic yet nourishing snack, combining the cooling tingle of peppermint with creamy almond butter and sweet chocolate chips. Great for pre-workout fuel, afternoon slumps, or a dessert with benefits.

Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup vanilla protein powder (or unflavored)
  • ⅓ cup almond butter
  • ¼ cup maple syrup or honey
  • ½ tsp peppermint extract
  • ¼ cup mini chocolate chips
  • Pinch of sea salt
  • 12 Tbsp almond milk (if needed)

Instructions

  1. In a large bowl, stir together oats, protein powder, and salt.
  2. Add almond butter, maple syrup, and peppermint extract. Stir until thick dough forms.
  3. Gently mix in mini chocolate chips. If dough feels dry, add almond milk one tablespoon at a time.
  4. Use your cookie scoop or clean hands to form 1-inch balls.
  5. Place in an airtight container and refrigerate for 20 minutes to firm up.

Notes

For nut-free versions, swap almond butter with sunflower seed butter. Store in the fridge up to 7 days or freeze for 3 months. Great for kids, workout snacks, or sweet cravings.
