Description

A delightful cake that combines rich chocolate and refreshing mint, perfect for celebrations and sweet indulgence.


Ingredients

  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1/2 teaspoon peppermint extract
  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 1 cup mint chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla extract, mixing until well combined.
  4. Gradually stir in boiling water until the batter is smooth.
  5. Divide the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool completely.
  7. Beat softened butter until creamy.
  8. Gradually add powdered sugar, then mix in heavy cream and peppermint extract until fluffy.
  9. Layer the cooled cakes with buttercream filling and cover the entire cake with remaining buttercream.
  10. Finish by sprinkling mint chocolate chips on top. Enjoy!

Notes

For a more minty flavor, increase the peppermint extract in the frosting or cake batter.
