- 4 cups powdered sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon peppermint extract
- 1 cup mint chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla extract, mixing until well combined.
- Gradually stir in boiling water until the batter is smooth.
- Divide the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely.
- Beat softened butter until creamy.
- Gradually add powdered sugar, then mix in heavy cream and peppermint extract until fluffy.
- Layer the cooled cakes with buttercream filling and cover the entire cake with remaining buttercream.
- Finish by sprinkling mint chocolate chips on top. Enjoy!

For a more minty flavor, increase the peppermint extract in the frosting or cake batter.
