Description

Delicious and creamy mint chocolate cheesecake bars infused with Baileys for a delightful dessert.


Ingredients

Scale
  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup Baileys Irish Cream
  • 1 tsp peppermint extract
  • 2 cups whipped cream
  • ½ cup chocolate chips
  • Mint leaves for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add powdered sugar, Baileys, and peppermint extract; mix until well combined.
  6. Fold in the whipped cream and chocolate chips gently.
  7. Spread the cheesecake mixture over the crust in the baking pan.
  8. Bake for 25-30 minutes or until set.
  9. Let cool, then refrigerate for at least 4 hours before serving.
  10. Garnish with mint leaves before slicing into bars.

Notes

  • For a stronger mint flavor, increase the peppermint extract.
  • These bars can be made a day in advance for better flavor.
  • Store leftovers in the refrigerator for up to 5 days.
