  • 2-4 drops green food coloring
  • 1 1/2 teaspoons peppermint extract (to taste)

  • 2-2 1/2 cups powdered sugar (220-275 grams)
  • 1-2 tablespoons heavy cream (or whipping cream or milk, as needed)
  • 6 oz semi-sweet chocolate (about 3/4 cup chocolate chips)
  • 1/2 cup unsalted butter (112 grams)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. Melt 1 cup of unsalted butter and 4 oz of semi-sweet chocolate in a large saucepan over low heat until smooth. Let it cool slightly.
  3. Mix in 2 cups of white sugar until combined.
  4. Add 4 large eggs, one at a time, mixing well after each addition.
  5. Whisk in 1/4 cup cocoa powder, 1 cup all-purpose flour, and 1/2 teaspoon salt until just combined.
  6. Pour the brownie batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
  7. Prepare the mint filling by beating 1/2 cup softened unsalted butter with 2-4 drops of green food coloring and 1 1/2 teaspoons peppermint extract.
  8. Add 2-2 1/2 cups powdered sugar and 1/4 teaspoon salt, mixing in 1-2 tablespoons of heavy cream until fluffy and spreadable.
  9. Spread the mint filling evenly over the cooled brownies.
  10. Melt 6 oz of semi-sweet chocolate and 1/2 cup unsalted butter until smooth.
  11. Pour the chocolate topping over the mint layer and spread evenly.
  12. Chill in the fridge for at least 30 minutes before cutting into squares.
