Description

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup assorted fresh fruits (berries, kiwi, mango, etc.)
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and sugar in a bowl until smooth.
  3. Beat in the egg and vanilla extract.
  4. Combine flour, baking powder, and salt in another bowl; gradually blend into the creamed mixture.
  5. Roll small balls of dough and press them into the tartlet molds.
  6. Bake for 10-12 minutes or until edges are golden. Allow to cool.
  7. Beat together the cream cheese, powdered sugar, and lemon juice in a separate bowl until smooth.
  8. Spoon the cream cheese mixture into each cooled tart shell.
  9. Top with assorted fresh fruits.
  10. Refrigerate until ready to serve.
