Description

A fun, easy-to-eat version of the beloved Mexican street food elote, featuring sweet corn mixed with creamy mayonnaise and zesty lime.


Ingredients

  • 2 cups corn (fresh or frozen)
  • 2 tablespoons mayonnaise
  • 1/4 cup cotija cheese (crumbled)
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Mini cups for serving
  • Cilantro for garnish (optional)


Instructions

  1. Combine in a large bowl the corn, mayonnaise, lime juice, chili powder, and salt.
  2. Mix well until the corn is coated.
  3. Spoon the mixture into mini cups.
  4. Top with crumbled cotija cheese and garnish with cilantro if desired.
  5. Serve immediately or chill until ready to serve.
