- 2 tablespoons mayonnaise
- 1/4 cup cotija cheese (crumbled)
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt to taste
- Mini cups for serving
- Cilantro for garnish (optional)
Instructions
- Combine in a large bowl the corn, mayonnaise, lime juice, chili powder, and salt.
- Mix well until the corn is coated.
- Spoon the mixture into mini cups.
- Top with crumbled cotija cheese and garnish with cilantro if desired.
- Serve immediately or chill until ready to serve.
