Description

Mini Pecan Pie Cheesecakes are the delightful dessert that combines creamy indulgence with a nutty twist!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/4 cup brown sugar


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crusts in the pans.
  7. In a separate bowl, combine chopped pecans, corn syrup, and brown sugar.
  8. Spoon the pecan mixture over the cream cheese layer.
  9. Bake for 20-25 minutes or until set.
  10. Let cool before removing from pans and serving.
