Instructions
- Combine pancake mix and water in a mixing bowl until smooth. If desired, fold in chocolate chips.
- Preheat a skillet over medium heat and lightly grease with cooking spray.
- Pour small amounts of batter onto the skillet to form mini pancakes. Cook until bubbles form, then flip and cook until golden brown.
- Once pancakes have cooled slightly, thread them onto skewers, alternating with pieces of fresh fruit.
- Drizzle with maple syrup and serve.
