- 1 sheet puff pastry

Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add chopped mushrooms and cook until softened.
- Stir in flour and cook for another minute.
- Add vegetable broth and thyme, stirring until the mixture thickens.
- Remove from heat and mix in Gruyère cheese until melted.
- Roll out puff pastry and cut into circles to fit your ramekins.
- Fill ramekins with the mushroom mixture and cover with puff pastry.
- Bake for 20-25 minutes or until the pastry is golden brown.
- Let cool slightly before serving.

- For a richer flavor, use butter instead of olive oil.
