Ingredients

  • 1 cup mushrooms, chopped
  • 1 cup Gruyère cheese, shredded
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon flour
  • 1 sheet puff pastry
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add chopped mushrooms and cook until softened.
  4. Stir in flour and cook for another minute.
  5. Add vegetable broth and thyme, stirring until the mixture thickens.
  6. Remove from heat and mix in Gruyère cheese until melted.
  7. Roll out puff pastry and cut into circles to fit your ramekins.
  8. Fill ramekins with the mushroom mixture and cover with puff pastry.
  9. Bake for 20-25 minutes or until the pastry is golden brown.
  10. Let cool slightly before serving.

Notes

  • Feel free to add other vegetables like spinach or leeks.
  • For a richer flavor, use butter instead of olive oil.
