Description

Delightful Mini Fruit Tarts featuring a buttery shell filled with pastry cream and topped with fresh fruit.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1/2 cup milk
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix the flour, powdered sugar, and salt. Add the softened butter and egg yolk, and mix until the dough comes together. Press the dough into mini tart pans and chill for 30 minutes.
  2. Bake the tart shells for about 10-12 minutes until golden. Let them cool.
  3. Heat the milk in a saucepan until warm. In a separate bowl, mix cornstarch and a little milk to form a paste. Add it to the warm milk and stir until thickened. Remove from heat and stir in vanilla.
  4. Fill the cooled tart shells with pastry cream.
  5. Top with freshly sliced strawberries and blueberries. Serve chilled and enjoy your mini fruit tarts!
