- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 2 tbsp sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans to form the crust.
- In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and heavy cream until fully incorporated.
- Pour the cheesecake mixture over the crusts in the mini pans.
- Bake for 20-25 minutes or until the centers are set.
- Let cool, then refrigerate for at least 4 hours.
- Before serving, sprinkle 2 tbsp of sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
Notes
- Ensure the cream cheese is at room temperature for easier mixing.
- Use a kitchen torch for best results when caramelizing the sugar.
- These cheesecakes can be made a day in advance for convenience.
