Description

Mini creme brulee cheesecakes are delightful desserts that combine the rich, creamy texture of cheesecake with the classic flavors of creme brulee, topped with a caramelized sugar crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 2 tbsp sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans to form the crust.
  4. In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and heavy cream until fully incorporated.
  7. Pour the cheesecake mixture over the crusts in the mini pans.
  8. Bake for 20-25 minutes or until the centers are set.
  9. Let cool, then refrigerate for at least 4 hours.
  10. Before serving, sprinkle 2 tbsp of sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
