Description

A delightful twist on elote, these Mexican Street Corn Salad Cups combine fresh corn, creamy dressing, and zesty lime in a fun, handheld serving.


Ingredients

Scale
  • 4 ears of fresh corn
  • 1 cup mayonnaise
  • 1 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1 lime, zested and juiced
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 12 small cups for serving


Instructions

  1. Husk the corn and remove all silk.
  2. Boil a large pot of water.
  3. Add the corn to the boiling water and cook for 5-7 minutes until tender.
  4. Remove the corn from the water and allow it to cool.
  5. Cut the kernels off the cob and place them in a large mixing bowl.
  6. Add the mayonnaise, cotija cheese, chili powder, lime zest, and lime juice to the bowl.
  7. Mix well until all the ingredients are combined.
  8. Season with salt and pepper to taste.
  9. Fold in the chopped cilantro gently.
  10. Spoon the mixture into individual cups for serving.

Notes

Allow the mixture to chill for a bit in the fridge for best flavor.
