A vibrant and flavorful pasta salad inspired by the classic Mexican street corn, perfect for spring dinners.
Ingredients

- 8 oz pasta (your choice)
- 2 cups corn (fresh or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
- Add the cooled pasta to the corn mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold and enjoy!
