- 1 pound shrimp, peeled and deveined
- 1 cup tomato juice
- 1 avocado, diced
- 1 lime, juiced

- Salt and pepper to taste

Instructions
- Bring a pot of water to a boil and cook the shrimp for 2-3 minutes until pink and opaque. Drain and cool.
- Combine the cooled shrimp, tomato juice, avocado, lime juice, cucumber, red onion, bell pepper, and cilantro in a large bowl.
- Season with salt and pepper to taste.
- Mix gently and refrigerate for at least 30 minutes before serving.
- Serve chilled with tortilla chips or crackers.
