  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil and add the shrimp. Cook until pink and opaque, about 2-3 minutes.
  2. Drain the shrimp and place them in a bowl of ice water to stop the cooking process.
  3. In a separate bowl, combine the tomato juice, cucumber, avocado, red onion, cilantro, jalapeño, and lime juice.
  4. Add the cooked shrimp to the mixture and gently toss to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
