- 1 pound large shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and minced
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and add the shrimp. Cook until pink and opaque, about 2-3 minutes.
- Drain the shrimp and place them in a bowl of ice water to stop the cooking process.
- In a separate bowl, combine the tomato juice, cucumber, avocado, red onion, cilantro, jalapeño, and lime juice.
- Add the cooked shrimp to the mixture and gently toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicier version, leave some seeds in the jalapeño.
- Serve with tortilla chips for added crunch.
- This dish can be made a few hours in advance for convenience.
