Ingredients

  • 1 rotisserie chicken, shredded
  • 8 tostada shells
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 cup shredded cheese (cheddar or queso fresco)
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Hot sauce (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Place tostada shells on a baking sheet and warm them in the oven for about 5 minutes.
  2. Mix the shredded rotisserie chicken with some hot sauce if desired in a bowl.
  3. Spread a layer of refried beans on each tostada shell.
  4. Top with a generous amount of the shredded chicken.
  5. Add shredded lettuce, diced tomatoes, and diced red onion on top.
  6. Sprinkle shredded cheese over the toppings, and add a dollop of sour cream.
  7. Garnish with chopped cilantro before serving.
