Description

A delightful fusion of crispy tortillas, savory ground beef, and melted cheese, reminiscent of the iconic Taco Bell dish.


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounces refried beans (1/2 can)
  • 1 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives, sliced
  • 1/4 cup sour cream
  • 2 green onions (finely diced)


Instructions

  1. Add a large frying pan or skillet on medium heat.
  2. Place the ground beef in the pan and break up the meat into small pieces as it cooks for about 5-8 minutes or until cooked through. Remove grease from the pan.
  3. Stir in taco seasoning, water, and enchilada sauce. Mix until evenly combined and let simmer for 1-2 minutes.
  4. Spread refried beans on one tortilla, top with ground beef, followed by a layer of cheese and another tortilla on top.
  5. Spread 1 tbsp of enchilada sauce on top of the tortilla and cover with shredded cheese. Repeat with remaining tortillas.
  6. Preheat Air Fryer to 400°F and carefully place pizzas in batches, cooking for about 5 minutes until cheese melts and tortillas are crispy.
  7. Alternatively, preheat oven to 350°F. Arrange pizzas on a lined baking sheet and bake for 8-10 minutes until crispy.
  8. In a frying pan, add a splash of oil and cook one pizza at a time, covered, for 4-5 minutes until the cheese melts and bottom is crispy.
  9. Transfer to a serving plate and add optional garnishes like tomatoes, red onion, olives, sour cream, and green onion. Serve and enjoy!
