- 2 cups sweet corn kernels, canned, drained, and rinsed
- 1 cup feta cheese, crumbled
- 1/2 cup Parmesan cheese, grated
- 1 medium jalapeño, chopped
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup breadcrumbs or crushed tortilla chips
- 1/2 cup flour
Instructions
- Combine the sweet corn kernels, crumbled feta, grated Parmesan, chopped jalapeño, and diced red bell pepper (if used) in a large mixing bowl. Gently fold the ingredients until fully mixed.
- Add lime juice, chili powder, smoked paprika, cayenne pepper (if using), salt, and black pepper to the corn mixture, stirring well to blend.
- In a separate bowl, beat the eggs and then add them to the corn mixture, stirring thoroughly.
- Set up shallow dishes with flour and breadcrumbs. Dust hands with flour to prevent sticking when shaping the bites.
- Scoop portions of the corn mixture and form into 1 to 1.5-inch balls or patties.
- Dust each bite in flour, dip into beaten egg, and coat with breadcrumbs.
- Heat 1/2 inch of olive oil in a skillet over medium heat. Test the oil by dropping a piece of bread; it should sizzle.
- Carefully place the coated corn bites into the hot oil in batches, frying for 2-3 minutes on each side until golden brown.
- Remove cooked bites with a slotted spoon and place on paper towels to drain excess oil.
- Serve warm with lime wedges, salsa, or guacamole for dipping.
Notes
For a healthier option, bake the bites at 400°F (200°C) for about 20-25 minutes or until golden brown.
