Description

Crispy and flavorful Mexican Corn Bites, perfect for parties or a quick snack, combining sweet corn, feta, and spices.


Ingredients

  • 2 cups sweet corn kernels, canned, drained, and rinsed
  • 1 cup feta cheese, crumbled
  • 1/2 cup Parmesan cheese, grated
  • 1 medium jalapeño, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup breadcrumbs or crushed tortilla chips
  • 1/2 cup flour


Instructions

  1. Combine the sweet corn kernels, crumbled feta, grated Parmesan, chopped jalapeño, and diced red bell pepper (if used) in a large mixing bowl. Gently fold the ingredients until fully mixed.
  2. Add lime juice, chili powder, smoked paprika, cayenne pepper (if using), salt, and black pepper to the corn mixture, stirring well to blend.
  3. In a separate bowl, beat the eggs and then add them to the corn mixture, stirring thoroughly.
  4. Set up shallow dishes with flour and breadcrumbs. Dust hands with flour to prevent sticking when shaping the bites.
  5. Scoop portions of the corn mixture and form into 1 to 1.5-inch balls or patties.
  6. Dust each bite in flour, dip into beaten egg, and coat with breadcrumbs.
  7. Heat 1/2 inch of olive oil in a skillet over medium heat. Test the oil by dropping a piece of bread; it should sizzle.
  8. Carefully place the coated corn bites into the hot oil in batches, frying for 2-3 minutes on each side until golden brown.
  9. Remove cooked bites with a slotted spoon and place on paper towels to drain excess oil.
  10. Serve warm with lime wedges, salsa, or guacamole for dipping.

Notes

For a healthier option, bake the bites at 400°F (200°C) for about 20-25 minutes or until golden brown.
