Ingredients

- 2 pounds beef chuck, cut into chunks
- 2 cups green chiles, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat a large pot or slow cooker over medium heat and add the olive oil.
- Brown the beef chunks on all sides.
- Add the onion and garlic, and sauté until softened.
- Stir in the green chiles, beef broth, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce the heat to low and simmer for at least 90 to 120 minutes, or until the beef is tender. If using a slow cooker, set on low for 360 to 480 minutes.
- Serve hot in tacos, burrito bowls, or on its own.
Notes
Avoid skimping on the spices for maximum flavor. Fresh cilantro can be used as a garnish.
