Ingredients

- 2 salmon fillets
- 1 cup jasmine rice
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, place the salmon fillets and drizzle with olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
- Bake the salmon for 15-20 minutes or until cooked through.
- While the salmon is baking, rinse the jasmine rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Once the rice is cooked, fluff it with a fork and stir in lemon zest.
- Serve the salmon over the lemon rice, garnished with fresh parsley.
Notes
- For added flavor, marinate the salmon in lemon juice and herbs for 30 minutes before baking.
- Feel free to add vegetables like spinach or cherry tomatoes to the rice for extra nutrition.
