Description

A delicious and healthy Mediterranean-inspired dish featuring salmon and lemon-infused rice.


Ingredients

  • 2 salmon fillets
  • 1 cup jasmine rice
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the salmon fillets and drizzle with olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  3. Bake the salmon for 15-20 minutes or until cooked through.
  4. While the salmon is baking, rinse the jasmine rice under cold water until the water runs clear.
  5. In a saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Once the rice is cooked, fluff it with a fork and stir in lemon zest.
  7. Serve the salmon over the lemon rice, garnished with fresh parsley.
